Le Selezioni P&V PGI Speck is a charcuterie product made from boneless pork thighs, trimmed with or without rump and then salted, lightly smoked and cured.
The taste is typical, intense, savoury but not salty, with hints of smoke, spices and aromatic herbs.
There are different ways of cutting speck : with or without the rind, by hand or machine, elegant and delicate in thin slices, cubes or strips. Each of these ways results in a different sensation on the palate.
