Giù Giù S. Angelo PGI is the only Sicilian cured meat with Protected Geographical Indication. It is produced in Sant'Angelo di Brolo, an ancient village near the city of Messina. The ancient recipe contains a mixture of the finest cuts of pork processed with the characteristic pork-butchering technique of 'knife-point' cutting.
Following, the meat is tanned and mixed by hand with sea salt and half-grain black pepper and seasoned for a period ranging from 30 to 90 days.
