With a slightly bitter flavor, curly endive is great to enjoy raw, as lettuce, but also cooked as a side dish or filling. Try it in a salad with anchovies and green olives, or cooked in a pan with a drizzle of oil, a clove of garlic, black olives, pine nuts and raisins.
